Cilantro (Coriandrum sativum) is an annual herb in the Apiaceae family, closely related to parsley, carrots, and celery. Native to regions spanning southern Europe and the Mediterranean to southwestern Asia, it grows quickly to about 1–2 feet tall, producing delicate, feathery green leaves and slender stems. The plant thrives in cool weather, bolting (flowering and going to seed) in heat, which shifts its flavor profile. Its leaves are bright green and deeply lobed when young, while the plant produces small white or pale pink flowers followed by round, aromatic seeds known as coriander.

Cilantro leaves offer a fresh, citrusy, and slightly peppery flavor that many love in salsas, guacamole, curries, soups, and garnishes for tacos, pho, and chutneys. The seeds (coriander) have a warm, nutty, citrus-like taste used whole or ground in spice blends, pickling, baking, and dishes like Indian curries or European sausages. While the leaves are polarizing—some detect a soapy taste due to genetics—the herb remains a staple in Mexican, Indian, Thai, and Middle Eastern cuisines for its bright, aromatic contribution to both raw and cooked preparations.
